Black Raspberry Trifle

Black Raspberry Trifle, originally uploaded by meliass.

I received this trifle bowl for my birthday from the boyfriend. I guess I’ve wanted one for a while but didn’t really think about it until we were randomly at a Kmart in the Outer Banks this spring. We were wandering the aisles looking for sunblock and long skewers for toasting marshmallows while camping. We happened down one of the Martha Stewart kitchen aisles and I saw this trifle bowl and immediately wanted it simply because it’s a little different looking than most of the trifle bowls you see these days. He rolled his eyes at me and kept walking…but a month or two later, I received it as one of my birthday gifts.

Anyway, I hadn’t used it until I made the trifle pictured here. I have grand plans to use it for my next tiramisu but haven’t gotten around to making that yet…

After making the mini chocolate cakes (from the previous blog post), I had a lot of random cake bits left. What to do with them? At first, the boyfriend suggested I just freeze them to grind up for a future pie crust. This sounded like a good idea so I froze the bits and pieces of Devil’s Food cake. Then he decided I should actually make a trifle. This sounded like an even better idea…so I did.

Coincidentally, we had a bunch of fresh black raspberries in the fridge. They were from his grandmother’s house and had been driven 3 hours by his sister when she came to visit.

After poring over some cookbooks for recipes, I decided to stick with a vanilla pastry cream as a chocolate one would have been a little too much with the rich chocolate cake.

The pastry cream recipe came from Martha Stewart’s Baking Handbook and I folded a fair amount of whipped cream into it as well. The Devil’s Food cake recipe is from Baking Illustrated.

I probably liked this more than I liked the mini chocolate cakes. I’ll go ahead and blame that on the black raspberries. That and my love of pastry cream and whipped cream.

I think I had more things to discuss…but talk of the trifle has distracted me.
